Rich Lentil Bolognese
★★★★★★★★★★ No reviews yetA hearty, slow-simmered ragù of brown lentils, finely chopped vegetables and tomato with a hint of red wine. Deeply savoury, freezer-friendly and loved by meat-eaters too.

Method
- Heat the oil in a large heavy-based pot over medium heat and add the onion, carrot and celery with a pinch of salt. Cook for 10 minutes, stirring, until soft and lightly golden.
- Add the mushrooms and cook for another 6–8 minutes until their liquid has evaporated and they begin to brown.
- Stir in the garlic, tomato paste, oregano and thyme and cook for 2 minutes until the paste darkens.
- Pour in the wine, if using, and let it bubble for 2 minutes until mostly reduced.
- Add the lentils, chopped tomatoes, stock and bay leaves, bring to the boil, then reduce to a gentle simmer.
- Cook partly covered for 35–40 minutes, stirring occasionally and adding a splash of water if it gets too thick, until the lentils are tender but not mushy.
- Remove the bay leaves, stir in the balsamic vinegar and season generously with salt and pepper.
- Meanwhile, cook the pasta in well-salted water until al dente, reserving a mug of the cooking water.
- Toss the drained pasta with the sauce, loosening with a splash of pasta water, and serve with basil and vegan parmesan.
Tips, storage & swaps
Many wines are fined with animal products, so look for one labelled vegan or check Barnivore. The sauce keeps for 5 days in the fridge and 3 months in the freezer. Use gluten-free pasta and check your stock to make it gluten-free. Pulse the vegetables in a food processor to save time and to hide them from fussy eaters.
Every recipe on itsvegan is 100% plant-based: no meat, fish, dairy, eggs, honey or gelatin. Always check packaged ingredients such as chocolate, bread and wine for hidden animal products.
