Method
- Put the sliced onion in a jar, add the lime juice or vinegar, sugar and salt, stir and set aside for at least 15 minutes while you prepare everything else.
- Blend the avocado, lime juice, coriander, salt and enough water to make a smooth, pourable crema.
- Heat the oil in a frying pan over medium heat, add the garlic and spices and cook for 30 seconds until fragrant.
- Add the beans and water and cook for 5 minutes, lightly mashing about a third of the beans with a fork so the mixture holds together.
- Season with salt and the lime juice and keep warm.
- Warm the tortillas one at a time in a dry pan over high heat for about 30 seconds per side, or over a gas flame, then wrap in a tea towel to keep soft.
- Fill each tortilla with beans, cabbage and pickled onions, then drizzle with avocado crema and hot sauce.
Tips, storage & swaps
The pickled onions keep for 2 weeks in the fridge and are great on everything. Store the crema with cling film pressed onto the surface to slow browning; it keeps for a day. Check corn tortillas are 100% corn if cooking for coeliacs. Add roasted sweet potato cubes or charred corn for a more substantial filling.
