Creamy Cashew Cheese Sauce
★★★★★★★★★★ No reviews yetA rich, tangy, golden 'cheese' sauce made in the blender from cashews and nutritional yeast. Pour it over pasta for mac and cheese, nachos, broccoli or baked potatoes.
Method
- Cover the cashews with boiling water and soak for 15 minutes (or soak in cold water for 4 hours or overnight), then drain and rinse.
- Put the cashews in a blender with the 300 ml water and all the remaining ingredients.
- Blend on high for 1–2 minutes, scraping down the sides once, until completely silky with no graininess.
- Taste and adjust: add more salt for savouriness, more lemon for tang or more nutritional yeast for cheesiness.
- Pour into a saucepan and warm over medium heat for 3–5 minutes, stirring constantly, until it thickens and turns glossy (if using tapioca it will become stretchy).
- Thin with a splash of water to your preferred consistency and serve hot.
Tips, storage & swaps
A high-speed blender gives the smoothest result; with a standard blender, soak the cashews for longer. Keeps in a sealed jar in the fridge for 5 days and thickens when cold, so loosen with water when reheating. For a nut-free version use 300 g peeled, boiled potato and 75 g boiled carrot instead of cashews, plus 3 tbsp oil. Stir in pickled jalapeños for a nacho cheese dip.
Every recipe on itsvegan is 100% plant-based: no meat, fish, dairy, eggs, honey or gelatin. Always check packaged ingredients such as chocolate, bread and wine for hidden animal products.
