Method

  1. Put about 60 ml (1/4 cup) of the milk in a small saucepan with the turmeric, cinnamon, ginger, cardamom and black pepper and whisk to a smooth paste.
  2. Whisk in the remaining milk and the maple syrup.
  3. Warm over medium-low heat for 4–5 minutes, whisking often, until steaming but not boiling.
  4. Remove from the heat and stir in the vanilla.
  5. Froth with a milk frother or whisk vigorously for 30 seconds, or carefully blend for a café-style foam (leave the lid vent open).
  6. Strain through a fine sieve if using fresh ginger, pour into mugs and dust with cinnamon.

Tips, storage & swaps

The black pepper helps your body absorb curcumin from the turmeric, and you will not taste it. Turmeric stains, so rinse pans and blenders promptly. Mix a jar of the dry spices in bulk for speedy lattes. Soy and oat milk froth best; check oat milk is labelled gluten-free if needed. Serve over ice in summer.
